The Dark Knight

No rooms, no numbers, nothing you could use in a fight. But it does tell you he comes back, which the first dungeon does not. If you want that to be a surprise, stop here.
What is known
Something is guarding what used to be a chapel, and it has been guarding it long enough to be tired of the job. It calls what it protects "the dark," never anything more specific, and it seems to genuinely believe there is no version of events where it stays dead. The unsettling part is that it turns out to be right.
The Sealed Gate - the first fall
Here he is only ever a knight defending a chapel that sent people to stop him, patient in the particular way of something that has had this same conversation many times before.
“So the chapel sends another one.”
“They always send someone. They never send enough.”
“MY TIME HAS ARRIVED.”
“Then come. Bleed like the rest of them.”
In the fight
Three lines rotate at random through the fight, never repeating back to back, so no two runs sound quite the same.
“Rise. Cut them down.”
“Burn.”
“The dark mends what steel breaks.”
“You fight like something that enjoys it.”
“WHAT ARE YOU.”
“Is that all the chapel taught you?”
“Another name for the ash.”
Only ever fires once someone actually goes down.

“But the dark does not end. It only waits.”
“This is not the last time we see each other.”

The Ascent - his return
He was right. A palace, not a chapel, and a different title, but the same voice, and the first thing out of him confirms it before he confirms anything else.
“You again? How dare you set foot in my palace a second time.”
“The last one who tried this is still bleeding into my floor.”
“SHOW HIM WHAT HAPPENS TO TRESPASSERS.”
Each wave he releases
“Two of you should be plenty for one intruder.”
“Stubborn. Fine - four.”
“SIX. I'm growing bored of counting.”
When he finally stands
“…You actually cut through all of them.”
“Then I suppose I'll have to remember how to fight myself.”
In the fight
“Rise again. On your feet - earn your keep.”
“You will regret standing so close.”
“This throne does not let its own die easily.”
“Running already?”
“You fight like you've done this before.”
“IMPOSSIBLE. No one fights like this in MY palace.”
“Is this genuinely your best?”
“One less mouth to complain about my hospitality.”

The second death

“…Hah. You actually did it.”
“Go on then. Climb higher, if you dare.”
“Someone has been watching this palace long before I ever ruled it.”
His last line. Whoever he means is still upstairs.
